Enjoy These Old Fashion Salads and Sides At Your Family's Table

Love my old fashion recipes. Maybe it’s my old age or maybe it’s the taste but I so much enjoy using my collection of recipes from my youth and early married days. Try these sides and salads and see if you don’t enjoy them, too!  What’s not to love about this tasty Cherry Waldorf Salad or my Hoosier Shell Macaroni?  The Idea Corn Casserole has a strange name but it sure tastes good!

CHERRY WALDORF SALAD
This recipe is another of my Southern Indiana heritage recipes! 

2 apples, chopped
1 tbsp lemon juice
2 ribs celery, chopped
1 cup fresh or frozen tart pitted cherries
1/2 cup dried cranberries
1/2 cup chopped pecans

Toss the apples in the lemon juice in a large bowl.  Add the celery, cherries, cranberries, and pecans. Gently mix ingredients together.  Make the following dressing and fold into the salad.  Refrigerate until serving time.

Dressing:
1/4 cup mayonnaise
1/4 cup sour cream
2 tbsp honey

HOOSIER SHELL MACARONI SALAD
This is a good pasta salad recipe for picnics, family reunions, etc as it doesn’t have any mayonnaise in it.

1 box (8-oz) small seashell pasta, cooked according to pkg directions and drained
1 1/2 cups small zucchini, thinly sliced
1 1/2 cups diced fresh tomatoes
1/4 cup chopped fresh parsley
1 tsp dried oregano
1 tsp dried basil
dash of garlic powder
1 bottle (8-oz) Italian Salad Dressing of your choice

Combine all the ingredients in a large bowl tossing well.  Cover and refrigerate overnight or at least a couple of hours before serving.

IDEA CORN CASSEROLE
This old recipe from a now defunct 1950s homemaker’s magazine has quite a unique name. I guess it was someone’s “bright idea?” Whoever had the “idea”, it was a good one that my family and I have enjoyed for many, many years.

1 small green pepper, chopped*
1 small onion, chopped
3 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon dry mustard
1/8 teaspoon cayenne pepper
1 can corn, cream style
1/2 cup milk
1 egg, beaten
1/2 cup dry bread crumbs

Saute the green pepper and onion in the butter. Combine the remaining ingredients and add to the green pepper and onion. Pour the mixture into a buttered shallow baking dish. Top with more dry bread crumbs and melted butter for a crunchy topping, if you would like. Bake the casserole at 350 for 20 minutes.
