Quick and Simple Egg Curry Recipes by Experienced Cooks

Being one of the versatile cooking ingredients, Egg can be cooked in multiple ways. Egg curry recipes, usually made up of onion, garlic, ginger and tomato based gravy, are immensely delicious. Below are a few egg curry recipes that will be loved by your family.

Recipe 1 – Egg curry

Ingredients

  • Yoghurt, boiled eggs, ginger, garlic, cilantro, red pepper powder, cilantro, cumin seeds, coriander powder, turmeric, salt, red onion, canola oil, hot green pepper.

Method

  1. Heat 3-4 tablespoon oil in a pan and add cumin seeds. Allow then to crackle and add ginger, garlic, green chillies, turmeric and red chilli powder.

  2. Now, add grated tomatoes and coriander powder. Stir the gravy till oil separates. Allow the mixture to cool down for some time. And once done, add a cup of yoghurt and mix it to perfect consistency. While putting on the heat again, cook for some time. Turn off the heat and add boiled eggs to the gravy and garnish with coriander leaves.

Recipe 2 – Creamy egg curry

Ingredients

  • 4 boiled eggs, finely chopped onion, tomato, ginger garlic paste, green chillies, turmeric powder, coriander powder, garam masala, kasuri methi, lemon juice, coconut milk and salt to taste.

Method

  1. Add oil in a frying pan and stir in ginger-garlic paste. Now adding onions, fry and green chillies, add the required spices and mix them well. Then, add tomatoes and cook till they become soft.

  2. Pour some coconut milk and let it come to boil. Add salt as per your taste and put boiled eggs in it after mixing well. Garnish with coriander leaves and squeeze little lemon juice.

Recipe 3 – Keralan egg curry

Ingredients:-

Boiled eggs, onion, coconut oil, ginger garlic paste, coriander leaves, tomato puree, salt and sugar, dry chillies, fennel seeds, curry leaves, coriander powder, pepper powder, turmeric powder and garam masala.

Method:-

Heat coconut oil in pan and fry all the spices for 30 seconds. Add ginger-garlic paste and onions, and add tomato puree and mix well. Cook this mixture till oil separates and add spices, salt and red chilli powder. The mixture needs to be boiled after inserting water. After which, add boiled eggs and simmer for 10 minutes. Garnish with chopped coriander leaves and serve hot with roti, dosa or appam.
